
Smoky Onion Oven Baked Baby Back Ribs

Yield: 2 servings, easily doubles
For the Ribs:
1 rack of baby back ribs (average weight should be 2 pounds)
2 Tablespoons of Smoky Onion
For the BBQ Sauce:
¾ cup Apple Cider VinegarÂ
3 Tablespoons brown or grainy mustardÂ
¼ cup waterÂ
¾ cup packed dark brown sugar  (always pack down brown sugar when measuring by volume)
2 Tablespoons Smoky Onion
InstructionsÂ
For the Ribs:
- To prepare the ribs, heat the oven to 350 degrees. Spread a 24 inch sheet of heavy duty aluminum foil, shiny side up, on a work surface. Â Place the rack of baby back ribs, on the foil and rub with 2 Tablespoons of smoky onion. Make sure the entire rack is coated with the spice blend. Wrap the rack of ribs in the foil, sealed well, Â like a packet, not letting any potential steam escape. Place the rib packet on a baking sheet.
- Roast the ribs for 30 minutes, then reduce the temperature to 250 degrees and cook between 1 hour 30 minutes  and 1 hour 45 minutes.
- While the ribs roast, prepare the barbecue sauce. Place the apple cider vinegar, mustard, water, dark brown sugar, and smoky onion spice blend  in a small or medium nonreactive saucepan. Bring the sauce to a boil and reduce heat to medium and leave to simmer until the sauce has reduced by half, it should take about 15-20 minutes. The sauce should thicken as it reduces.
- Remove the ribs from the oven and let cool briefly. Open the foil to carefully escape the steam. Transfer the ribs to a cool baking sheet and brush the ribs with BBQ sauce on both slides.
- Turn on the broiler or raise the oven to 450 degrees.
- Broil the ribs until the sauce sizzles and browns for 3-4 minutes on each side or bake the ribs in the oven at 450 degrees for 8-10 minutes.
- Serve the ribs with more BBQ sauce on the side and your favorite Spicy Goddess Side dishes.Â
