Rowdy Ranch Chicken Soup

1 pound boneless and skinless chicken breast
1 packet Rowdy RanchÂ
1 Tbsp. Avocado Oil or Olive OilÂ
1 shallot or small onion, dicedÂ
3 carrots, choppedÂ
3 celery stalks, choppedÂ
34-40 oz of chicken bone broth
ÂĽ cup cooked rice or noodles (optional)
- In a mixing bowl combine skinless chicken breast with Rowdy Ranch mix and set aside.
- In a large pot or dutch oven over medium-hight heat add Avocado Oil and sautĂ© the diced shallot until softened and translucent, about 5 minutes. Add the celery and carrots and cook, stirring, until softened, about 5 minutes, adjusting the heat to avoid scorching.Â
- Pour in stock and bring to a bubble. Add seasoned chicken and mix well to combine. Bring the soup to a boil.
- Reduce the heat to maintain a low simmer, uncovered for 12-18 minutes until the chicken breast is cooked. Remove the cooked chicken from the pot onto a plate and use two forks to shred the chicken. Add the shredded chicken back to the soup. Add rice or noodles, if desired.
- Taste the soup for salt, and season with salt to taste (this depends on the salt content of your broth).
- Serve in a bowl and enjoy.Â
